At this point you can start shaping the sand with tools like brushes, stones, shells, the edge of a knife, or anything else you have to hand. Avoid narrow shapes which might topple easily, and remember that the sand must stay wet in order to be malleable. Once you have the basic structure down you can start to decorate it with shells, pebbles, seaweed, and driftwood in order to give it a distinctive spin that is all you guys!

The Sian Ka’an Biosphere is a stunning haven for birds of all shapes and sizes; around 326 bird species have been recorded in the biosphere. 219 of these species are full time residents, and the final 65 are migratory species which winter here; this biosphere is on the migratory route for the migratory birds which winter in Central and South America. You can see 21 of the 23 wading bird species which can be found across Mexico.

Furthermore, the Sian Ka’an boasts the second highest numbers of reproduction amongst rare and endangered species of bird including the wood stork, white ibis, albo garzon, hairy heron, and jabiru. It is a haven for protecting rare fauna.

When you visit, or indeed stay in, the Sian Ka’an Biosphere you will have a chance of seeing many spectacular species of bird, including the frigate, toucan, crowned pigeon, great curassow, the ocellated turkey, Yucatecan troglodyte, Yucatecan chara, and black mimido. Furthermore, this is the first area of Mexico to report sightings of dark ibis and flamingo.

In the Sian Ka’an Biosphere, there is also a huge swathe of land and protected habitat for crocodile; the largest in Mexico, in fact. They might not be the most friend fauna in the region, but they are certainly one of the most fascinating. The Sian Ka’an has one of the best preserved population of Morelet’s crocodile, known as the Mexican crocodile, which, in fact, coexists very well with the American crocodile population found here. In the 300,000 plus hectares of habitat you might even see some turtle species!

It’s not all scales and feathers here, though; a spectacular 96 mammal species can be found within the Sian Ka’an Biosphere ranging from the majestic and mysterious jaguar to the secretive bat, and even the joyful dolphin! The standout residents include the species of ocelot found here, the puma, the jaguar and jaguarundi, and of course the spider monkeys, tapir, paca, manatee, and whales that can be seen in the area.

This can be a very smart thing to do in many cases; there is no reason why you shouldn’t get great deals on things like centerpieces, gift bags, or even your invitations, but there are some things which warrant considerations other than cost taking priority.

Your photography is a good example; it can be very tempting to let that amateur photographer (we all know one) take care of your wedding snapshots for a cut price (or for free), but since these will be your most lasting memento of your wedding day we suggest that you shop around. Hiring a pro could be pricey, but it is very much worth it. Not doing so is just one of the wedding planning mistakes that we would suggest you avoid. Here are the others:

Just going with any photographer who has a good portfolio is a huge mistake; how good they are is not imperative if they don’t get the vision you have for your wedding day. The simplest way to deal with this is to have a cell phone check in point at the door to your venue, or to have your officiant (or a nominated member of your wedding party) officially request that all phones and cameras are turned off and put away for the duration of the ceremony. This might seem extreme to you, but in actual fact most guests will totally understand and be happy to comply with your request; after all they can take photos at the reception!

Mole is iconic, but did you know that there are many different kinds? Mole varies from region to region, even from family to family, and can be made with more than 30 ingredients! The most famous is Mole Poblano, hailing from Puebla, which is most often served over turkey!

As we said before, mole can be made with as many as 30 ingredients at a time. Chili is almost always an ingredient, but sweeter flavours like cinnamon, sugar, and chocolate are often found in mole alongside some kind of nuts (almonds or peanuts usually), bread crumbs, and cloves.

Most surprising, however, is the fact that the origins of mole are a mystery! There are, in fact, several legends which lay out how mole came to be. The earliest is, perhaps, the least plausible and states that mole was created and served by Moctezuma, king of the Aztec empire, served mole to the conquistadors, who he believed to be Gods.

There may be a grain of truth in that story, but there are more direct origin stories for the most well-known variety of mole, mole poblano! It is generally accepted that mole poblano, a thick, chocolate-infused sauce most often served over poultry, was created first in the convent of Santa Rosa in Puebla, but how and by whom is disputed. Some say that the sisters of the convent threw together what they could find when an Archbishop made a surprise visit, but others say that Fray Pascual accidentally spilled a then unheard of combination of spices into the pots which turkeys were cooking in. Whichever story is true, mole was quickly adopted and spread across the country.

Every cook has their own way to make mole, and recipes are generally treasured family secrets. Preparing mole takes so long, and is such a complicated undertaking that it is most common to make it in big batches. The average home cook, however, does not have the right equipment to blend such large amounts, and she they will generally take the cooked ingredients to the local Molino (grinder) to get the mole to the perfect consistency.
